Step cooking
- We will need a small piece of pumpkin. It needs to be cleaned of seeds and peel. Throwing away the seeds is not worth it, you can dry and eat them, they are very useful. Choose sweet varieties of pumpkin, fresh, juicy, so that the finished dish is as tasty as possible.
- Rub the pulp of the pumpkin with a fine grater. Some squeeze the juice after this, but I do not recommend this. If you knead the dough quickly, then the juice will not stand out, as a result the pancakes will turn out juicy, sweet. We wash one average apple, we rub it with a fine grater too. The peel from the apple does not need to be removed. The apple will give the finished dish a pleasant taste and aroma. In a deep bowl, mix the flesh of an apple and pumpkin.
- In a separate bowl, send 2 eggs, a teaspoon of vanilla and 150 grams of regular sugar, a pinch of salt. Beat eggs with a whisk until foam appears.
- Add 150 g of kefir to the egg mass, continue whisking with a whisk until the sugar melts. You can choose any fat content of kefir, at your discretion. But it is better to take kefir thick to use less flour for the test. When the sugar has completely dissolved, pour the liquid into the crushed pumpkin, mix well.
- Sift through a sieve 130 g of flour, add 1 tsp to it. baking powder, mix and add to the mass. Knead the dough, it should be homogeneous without lumps.
- Pour vegetable oil into the pan, send to the fire. Be sure to use flavourless refined oil. As soon as the oil is heated, spread the dough with a tablespoon.
- Cook the pancakes on low heat under the lid for 1-2 minutes, then remove the lid, turn the pancakes with two forks or a special spatula and fry for another 1-2 minutes already without the lid. When you remove the lid, make sure that condensation does not get into the pan, because the oil will start to shoot, so you can get burns.
- We spread the finished pancakes first on a plate covered with paper towels. So you can remove excess vegetable oil from them. After that we transfer the pancakes to the serving dish.
- You can serve with tea or another favorite drink. Additionally, you can offer berry jam, jam or sour cream.
You can store pancakes in a dish with a lid in the refrigerator. Before use, put them in the microwave for 30 seconds and they will become, as if only from the stove.
