Step cooking
- We carefully clean the onion, wash it and cut into small pieces.
- We put the pan on the fire, pour 2 tbsp. l vegetable oil, and then, when the oil is slightly warmed up, pour the onion. Fry the onion for about 5 minutes, periodically mixing, until soft and slightly golden.
- While the onion is fried, cut the liver into medium sized pieces.
- Grind the liver with a meat grinder (you can also use a blender).
- Then we send the fried onions to the meat grinder (we grind it directly into a container with ground liver).
- In a small bowl we drive in 4 raw chicken eggs, mix them lightly with a fork and send to the liver.
- There we add salt and black pepper to taste.
- Thoroughly mix all the ingredients with each other until smooth.
- Add 3 tbsp to the resulting mixture. l mayonnaise (if desired, mayonnaise can be replaced with sour cream) and mix again.
- After that, we begin to gradually (portionwise) introduce the flour, each time, thoroughly mixing the mixture after adding the next portion, to prevent the appearance of lumps.
- We put the clean frying pan on the fire again, pour 4 tbsp on it. l vegetable oil (in the process of frying, you may have to add more oil, so it’s better to take it with a margin immediately), and wait until it warms up well. When the oil is hot, add the mixture to the pan, forming separate small pancakes from it.
- It is necessary to fry the pancakes on medium heat for literally several minutes on each side (they are fried quickly enough, so be careful that the pancakes do not burn). Put the finished pancakes on a serving plate and start the meal! The serving dish can be additionally covered with paper towels so that excess fat is stacked from pancakes.
Decoration and serving
Such pancakes can be served with almost any side dish (buckwheat, rice, mashed potatoes, pasta, etc.) or vegetable salad. You can use them both hot and cooled. When serving, pour them in tomato or sour cream sauce¸ and sprinkle with fresh chopped herbs. Enjoy your meal!
