Step cooking
- We will prepare all the ingredients on the list and the desktop. One large zucchini is well washed and grated on a medium grater. If your zucchini is not young, then the peel can be cleaned. Instead of zucchini, you can use zucchini or squash.
- Grated zucchini must be left for 10 minutes so that as much juice as possible comes out of it, in pancakes it is not needed at all, otherwise the dough will turn out to be watery. In order to get rid of juice faster, zucchini needs a little salt. Drive one chicken egg into a deep bowl. If your eggs are small, then take two eggs. As a rule, zucchini already has its sweetness, but if you want more sweet pancakes, add 1 tbsp. l sugar or more, see to your liking.
- Using a mixer or whisk, beat the eggs with sugar until splendid. Next, add 200 g of wheat flour. The flour must be sifted to enrich it with oxygen and make it lush and airy.
- Pour 100 - 150 ml of kefir 2.5% fat, mix thoroughly until smooth. The amount of kefir depends on what kind of pancakes you want to get. If you want the pancakes to be denser and higher, then you should add less kefir, and if you want soft, tender pancakes, add a little more kefir. Zucchini, which stood and stood out the juice, squeeze the maximum hands and add to the dough, mix. Pour 1/3 tsp. soda.
- Proceed to fry the fritters. We put the pan on the stove, pour 2 - 3 tbsp. l odorless vegetable oil. In a well-heated oil, spread one tablespoon of fritters and fry over medium heat for 2 to 3 minutes until golden brown. Then turn the pancakes on the other side and fry for a few more minutes.
- We put the finished pancakes on a paper towel to get rid of excess oil. If necessary, add a little more vegetable oil to the pan and fry the pancakes from the whole dough. Serve pancakes with sour cream, honey for breakfast, afternoon snack or any snack. And if you make them not sweet, then such pancakes will perfectly serve as a vegetable side dish.
