Step cooking
- 500 g of beef liver must be washed, dried, remove all films and veins.
- Peel the onion and cut into 4 parts, peel and grate the potatoes.
- Cut the prepared liver into small pieces and put in a blender, add onions and beat until smooth.
- In the liver mass add 2 eggs, grated potatoes, 2 tbsp. l with a slide of breadcrumbs, 1 tbsp. l sour cream or mayonnaise, salt and pepper to taste. Mix well and cook.
- Pour a small amount of vegetable oil into the pan and heat well. Gathering a tablespoon of liver mixture, form pancakes in a pan. Since the dough is quite liquid, it is necessary to leave a space of about 1 cm between the pancakes so that they do not stick together when spreading.
- Fry pancakes should be on medium heat for about 1 minute on each side. Since the structure of the pancakes is very delicate, it is better to turn them over with a spatula. In the process of frying, it is necessary to add vegetable oil to the pan. After removing the fritters from the pan, it is advisable to lay them on a paper towel in order to remove excess vegetable oil.

- You can serve with various sauces, here is one of the options.
- Add crushed garlic, salt, pepper to sour cream to taste. Optionally, you can add a little favorite greens. The sauce is ready.
- Together with liver pancakes, you can serve chopped vegetables, fresh or canned tomatoes, cucumbers, bell peppers, radishes, green onions.
- Grilled vegetables, such as eggplant or zucchini, will also be appropriate.
- As a side dish, you can choose mashed potatoes or potatoes with herbs, pasta or porridge from any type of cereal.

- Beef liver is considered the most useful and safe. High-quality beef liver of a uniform maroon color, without spots. The characteristic white film separates easily, the liver is smooth and shiny. If the liver is sticky or windy, it is most likely not fresh, and you should not buy such a product.
- Instead of beef, you can use chicken liver.
- The blender can be replaced with a meat grinder with a fine mesh.
- In order to determine the exact amount of salt and pepper, try the first ready-made pancakes to taste.
- For piquancy, a crushed liver can be grated on a fine grater.
- Breadcrumbs can be prepared by yourself, having beaten in a blender a pre-dried loaf.
- The size of the finished pancakes depends on the size of the spoon used: the larger the spoon, the larger the pancakes, and the smaller their number.
