Step cooking
- Prepare the fish. The perch has rather sharp fins, so cut them off first. It is convenient to do this with sharp kitchen scissors. Clean the fish from the scales, cut off the head and tail, remove the offal. Wash and dry prepared carcasses with paper towels.
- Peel a small carrot (2 pieces) and cut into thin rings. Cut the lemon in half and cut 4-5 rings, which are cut into half rings.
- Rinse the mushrooms (4 large mushrooms), remove the skin and cut into thin slices.
- Peel the garlic (2 cloves) and cut into slices.
- Use a sharp knife to make deep transverse cuts on the perch carcass, and put a plate of garlic in each cut.
- On the foil, lay the sliced champignons (2 mushrooms), on top on the mushrooms lay the sliced carrots (1 piece) and lemon sliced in half rings (2-3 half rings). Lay out the twigs of greenery.
- Place a perch carcass on a pillow of vegetables. Put 1-2 half rings of lemon in the abdomen and spread lemon half rings (2 pieces) on top.
- Wrap the foil in the shape of a boat to the size of the carcass of the fish (the top remains open). Sprinkle fish on top with fish spices to your taste, sprinkle with lemon juice and pour olive oil (about 1 tablespoon).
- With the second carcass of sea bass, do the same. Put the foil boats on a baking sheet and bake in an oven preheated to 190 degrees for 40 minutes.
Decoration methods and serving options
For home dinner, the dish can be served right in the foil, laid out on an oval fish dish. This will preserve all the juice released during the baking process. For a gala dinner, carefully transfer the carcass to the dish, cutting portioned portions along preliminary transverse cuts.
Put the vegetables baked with fish along the edges of the fish. Garnish the sides of the dish with lemon slices, rings of fresh cucumbers, herbs and olives. Red and white thick sauces are suitable for baked sea bass; you can serve spicy, wine, creamy and sweet and sour berry Finnish sauce. From drinks suitable pink or white table wine.
