Step cooking
- First, prepare the fish. Today we use four carcasses of sea bass. Fresh fish will be the best. But you can also buy frozen carcasses. First, we clear the fish of scales, remove the head. Cut the belly along and remove all the insides. We cut the fins and tails, rinse, make cross-shaped incisions on one side. These cuts are needed so that the fish is well saturated with marinade.
- Pour 30 g of vegetable oil into the baking dish, distribute it along the bottom and spread one notch of perch carcasses with notches up.
- Sprinkle the fish on top with salt and pepper to taste. You do not need to add these spices in large quantities, as we will still cover the fish with sauce. We clean two large onions, cut them into rings and spread on top of the perches in an even layer.
- Now make the sauce. In a small deep plate, mix three tablespoons of mayonnaise and ketchup, a teaspoon of mustard. We clean three cloves of garlic, rinse, pass through the garlic and put in the sauce. We wash half a bunch of dill, chopped finely and send to the sauce. Add here a couple of teaspoons of olive or sunflower oil, salt, pepper to taste, mix until smooth. You can add more greens, or additionally sprinkle fish with chopped dill.
- Pour the sauce with fish and onion. You can first coat each carcass of perch with sauce, then put onion and grease it with sauce. The sauce turns out to be very tasty, it will give the finished dish a piquant taste, so do not be afraid to add a lot of it. It is advisable to cover the baking dish with a clean towel and leave the fish to marinate in the sauce for 10-20 minutes. But if there is no time for aging, you can immediately send it to the oven. Turn on the oven 180 degrees, send fish to it, bake for 50 minutes. Each baking time can be different, it depends on the features of the oven. Therefore, after 40 minutes you can check the fish for readiness.
- We take the fish out of the oven, let it cool slightly. We spread the carcass of baked perch with onions in a portioned plate. You can supplement the dish with rice porridge, boiled potatoes, slices or mashed potatoes, beans, fresh vegetable salad. Baked perches are very tasty and cold.
