Step cooking
- First you need to choose and prepare the rabbit legs for cooking. When buying, pay attention to the color of the meat of the animal. Pale pink suggests that this is a young rabbit, which is no more than six months old. His carcass will weigh about 1.5 kg. If the color of the meat is red and the carcass weighs a lot more - it means it's an old rabbit, the meat is tougher, it will be much more difficult to cook it deliciously.
- Before cooking, the legs need to be soaked to remove a specific smell, to make them more juicy and tender. To do this, put them in a deep bowl, fill with water, after an hour, drain the water and pour clean. To withstand in water they need, in total, at least three hours. After that, we take the meat out of the water, dip it with a paper towel, and send it to a bowl.
- Mix 130 g sour cream with salt and pepper to taste. If you wish, you can immediately add other seasonings as you wish. From seasonings, rabbit meat is combined with coriander, basil, cloves. Food lovers can add cinnamon and lemon.
- Peel the carrots, rinse, grate. Peel the onion, rinse, cut into cubes. We send the pan to the fire, heat it well and put the legs, fry on both sides until golden brown. Please note that when frying, we do not use vegetable oil. Pour a little vegetable oil into the same pan and pour onions with carrots, fry until soft.
- We take a small baking dish, put the fried vegetables on the bottom. We give the rabbit legs a little cool. After that, fill them with sour cream, to which we have already added spices, mix well so that each piece is in sour cream. We spread the meat on a vegetable pillow.
- We cover the form with foil and send it preheated to 200 degrees for 45 minutes. Then remove the foil and bake another 15 minutes.
- The result is a fragrant, soft rabbit with a golden crust. We serve each in a portioned plate to any side dish (rice, buckwheat, arnovka, potatoes) or with a salad of fresh vegetables. This dish is not only tasty, but also healthy. It can be classified as a diet, it is recommended to use for those who follow the figure. Even children will gladly eat a rabbit in this cooking option.
