Step cooking
We prepare the constituent dishes
- Gut a small burbot weighing 750-800 g, wash and cut into portions.
- Peel and wash the vegetables. Chop two small onions in half rings. Dissolve two carrots on a coarse grater.
- At the bottom of the form pour 2 tbsp. l vegetable oil and 1 tbsp. l mustard oil.
- Dissolve 5-6 pcs. peeled potatoes in thin circles and lay on the bottom of the form.
- Add a little salt to the potato layer and sprinkle (optionally) with ground black pepper.
- Squeeze the top of the potato through a press or finely chop 2-3 cloves of garlic, mix everything well and leave to marinate until the remaining components of the dish are fried.
- Heat a couple of tablespoons of vegetable oil in a pan. In oil, add onions with carrots until golden brown and remove from the pan in a separate cup / plate.
- Pieces of burbot to brew in 2-3 tbsp. l flour and fry until crust over high heat.
We form a dish
- On a potato layer marinated in a baking dish, evenly spread half the carrot-onion frying.
- Pour both layers ½ cup filtered water.
- Lay with a thick layer of fried burbot.
- If desired, sprinkle the fried fish pieces with a couple of pinches of dried thyme.
- Put the rest of the frying on top of the fish, and evenly onion the fried onions with carrots.
- Bake in a well preheated oven for approximately 40 minutes.
Served baked with potato burbot, both hot and cold. The dish is decorated with chopped herbs, usually dill or parsley. Baked in the oven burbot can be supplemented with fresh or pickled vegetables - cucumbers, tomatoes, bell peppers and fried eggplant. Also served any greens in bunches and sauces - tomato or soy.
