Step cooking
Types of fillings and cooking process:
- For the first toppings, we use ham and any hard cheese that you like. Cut the ham into slices or strips of medium size, rub the cheese on a medium grater.
- The next toppings will require lightly salted salmon and cream cheese. Make sure the salmon is seedless. We cut it into a small cube. Cream cheese has a soft and uniform consistency, so immediately put it on a salmon with a teaspoon.
- The next toppings will consist of ricotta cheese and herbs. Ricotta is a delicate pasty cheese that does not taste sour. Knead it with a spoon and add finely chopped greens, mix well. Instead of ricotta, you can use ordinary cottage cheese, the main thing is that it is not very sour and dense. Greens can be used absolutely any to your taste. Goes well with ricotta chives.
- For sweet croissants we use jam filling. Jam should be thick, and what taste you choose depends on your preference.
- Also, for a sweet filling, ready-made chocolate paste is perfect, such croissants are simply adored by children and chocolate lovers.
Cooking Croissants
- For quick croissants, it is most convenient to use puff yeast or yeast-free pastry dough, which you need to shift from the freezer to the refrigerator for the night to unfreeze naturally.
- Sprinkle the working surface with flour, put the dough and with a sharp knife we make incisions with a cross.
- Then we roll it into a rectangular layer. Do not try to roll the dough very thinly, as the effect of lamination will disappear. Cut the dough into rectangles, measuring their size with the palm of your hand. But you can adjust the size as you wish.
- On the wide side of the dough we spread 1 - 2 tbsp. l toppings. We bend the corners inward to the filling and spin the croissant, giving it the shape of a crescent.
- We leave the croissants in a warm place for 1 - 1.5 hours, so that the dough rests and comes up. Then put the croissants on a baking sheet covered with parchment paper. Grease with an egg and send to a preheated oven to 180 degrees for 15 - 20 minutes until golden brown.
- Cool croissants ready and serve.
