Step cooking
- To prepare the meat filling, you can use the already prepared minced meat, or skip 400 g of pitted beef and veins through a meat grinder. The meat should be low in fat. If desired, you can combine 200 g of beef and 200 g of pork minced meat, so it will be fatter and juicier. Or you can add some fresh bacon to ground beef. Stuff the minced meat in a deep bowl.
- Peel 200 g of onion from the peel, rinse it under water and cut into small cubes on a cutting board. Do not grind onion through a meat grinder, it is chopped onion that makes the filling juicy and saturated.
- Rinse under running water a little greens of dill and parsley, about half a bunch. Then finely chop the greens and add to the bowl with minced meat.
- Sprinkle all the ingredients with approximately 0.5 tsp. ground coriander. Then add black pepper and salt to taste. Sprinkle with a little red hot pepper. Do not add many spices at once, so as not to spoil the filling. Instead, you can use any other suitable spice instead of coriander.
- Pour 100 ml of cold milk to the minced meat (if necessary, cool it in advance), it will also give the filling a juiciness and make it softer.
- Mix all the ingredients well with a spoon. Instead of milk, you can use water, and preferably mineral. Then, well, mince the minced meat with onions and spices with your hands, so that the onions give juice, and the filling acquires a delicious meat aroma. You can try minced meat to check the amount of salt and pepper. Add spices as needed.
- Cover the bowl with the cling film or the lid and place in a cold place until the dough for whites fits, so that the minced meat is well marinated and ready for use.
Such a fragrant and juicy meat filling can be used not only for whites, but also for pies and pies, both in a frying pan and in the oven. If you cook closed whites and are not sure that the meat is cooked, you can first lightly stew the meat with onions in a pan, and then mix everything with spices.
