Ingredients
- Meat (pork tenderloin) - 500-600 g;
- Champignons - 500 g;
- Wheat flour - 1 tbsp. l .;
- Onions - 1 pc.;
- Cream - 500 ml;
- Salt to taste;
- Butter - 30 g;
- Ground black pepper - to taste;
- Hot red pepper - to taste;
- Olive oil - for frying;
- Dry mushrooms - 2 pcs.
Step cooking
- Dry mushrooms are pre-soaked in a small amount of cold water. But this dish can be prepared without wild mushrooms. They are needed to enhance the flavor of the dish. We clear the meat from the films and cut into large pieces 5-6 cm thick.
- We knead each piece of meat well and squeeze it with our hands to a thickness of 1.5 cm.
- Slices of meat, salt on one side, turn and salt on the other. Add a little black pepper and red hot pepper.
- Pieces of meat are placed in a bowl and sprinkled with olive oil. Instead of olive, you can take any other vegetable oil. We cover the bowl with a lid and leave the meat to marinate for a while.
- Wash mushrooms, dry, peel and cut into medium-sized cubes.
- Peel the onion from the husk, cut in half and chop finely with a knife.
- Drain the dried mushrooms and finely chop. The infusion, in which the mushrooms were soaked, are not poured, but filtered in a cup. This must be done in order to exclude particles of sand that may be at the bottom of the infusion.
- Put the frying pan on the fire and pour a little olive oil. Add half the butter and melt.
- Put the pieces of meat in a single layer in the heated oil. First, fry on one side until golden brown. Then turn and fry on the other side. We take out the fried meat on a plate and set aside.
- Put chopped onions in a frying pan and fry, stirring, a couple of minutes until transparent.
- Spread the mushrooms and fry all together for 3-4 minutes.
- Spread the remaining butter on top of the pan and add chopped forest mushrooms.
- Sprinkle with flour on top. The amount of flour depends on the fat content of the cream. The fatter the cream we take, the less flour we add in the cooking process.
- Pour in the remaining mushroom infusion, cream, add salt, bring to a boil and boil for 2-3 minutes.
- We return the fried meat to the pan and cook until the meat is ready, and when the sauce thickens.
- Put the finished dish on a plate and serve with potatoes or any neutral side dish. Enjoy your meal!
