Step cooking
- Wash the pork (750 g) well under running water, dry it with paper towels and cut it into steaks.
- We put 2 steaks on a cutting board, cover with a plastic film and beat off with a hammer on both sides to make it softer.
- Then we stack the steaks on top of each other and cut into cubes first, and then into cubes.
- Put the meat in a bowl and add 0.5 tsp. salt, 0.5 tsp black pepper and 1 tsp. dried oregano. Mix the meat well, as if rubbing it with salt and spices. We cover with cling film and set the meat aside for 30 minutes to marinate it.
- Onions (350 g or about 3 medium onions) are cleaned and washed. Then cut it into thin quarter rings.
- Peel the potatoes (800 g), wash them and cut them into not too thick cubes. Put in a bowl. Add 1 tablespoon of salt and pour about 1 liter of cold water. Mix with a spoon until the salt dissolves and set aside for 20 minutes.
- In a small bowl three on a coarse grater 170 g of hard cheese. Add to it 150 g of mayonnaise, 200 g of 20% sour cream and mix well with a spoon.
- Grease a baking tray with 1 tablespoon of vegetable oil. We put in one of the corners of the baking sheet a ring for forming salads and put about 4 tablespoons of chopped potatoes in it. Level with a spoon and sprinkle with black ground pepper to taste.
- We spread the meat in one layer, evenly distributing it over the potatoes. Put the chopped onion in the next layer. Top with about two tablespoons of a mixture of cheese, mayonnaise and sour cream. Evenly level the top layer.
- Carefully remove the ring. We put it next to the already laid out ingredients and repeat laying out all the layers. In total, 6 servings should fit on a baking sheet. We put the baking sheet in the oven preheated to 180 degrees for 20 minutes. This time is enough for the top layer to melt and drip along the edges.
- Then reduce the oven temperature to 170 degrees and leave our dish in it for another 15 minutes. When the cheese is browned and covered with a delicious crust, remove the baking sheet from the oven, let it cool slightly and lay the meat in French on portioned plates. If desired, sprinkle with chopped green onions or herbs before serving.
