Step cooking
Cooking dough
- Pour flour (250 grams) into a deep bowl. You can take ordinary premium flour, but it is better to give preference to special flour for Italian pizza made from selected grains.
- Add quick dry yeast (1/2 teaspoon) to the flour and mix well to make the yeast evenly distributed. Pour sugar (a teaspoon) and salt (1/2 part of a teaspoon) here.
- Pour olive oil (1-2 tablespoons) into the dry ingredients and start kneading the dough with your hands.
- While kneading, add warm water (150 ml) gradually and continue the kneading process continuously.
- It is necessary to ensure that the dough becomes smooth and elastic.
- Smear a clean, dry bowl with olive oil (1/2 teaspoon) and put the kneaded dough into it. Cover the bowl with cling film or a towel and place in a warm place so that the dough rises.
Cooking stuffing
- Cut and peel 1/4 of the purple onion. Finely chop it into cubes.
- Send thinly sliced bacon pieces (3-4 pieces) to a well-heated dry pan and fry them on both sides until crisp.
- Remove the well-fried bacon from the pan, and in the melted fat, put the onion chopped into cubes and fry with constant stirring.
- Add ground beef (200 grams) to the onion and continue to fry it until golden brown, stirring constantly.
- Drain the excess fat formed during frying the minced meat, and transfer the prepared minced meat from the pan to the plate.
- Cut the ham into large cubes (70-100 grams), and leave the sausage in whole circles (8-10 pieces).
- Grate mozzarella cheese (200 grams) on a coarse grater and parmesan (150 grams) on a fine grater.
Cooking sauce
- Peel the garlic (1 clove) and leave it whole.
- Put the stewpan on the fire, pour olive oil (1-2 tablespoons) into it and put the peeled garlic clove in it so that it gives its flavor to the oil.
- In a well-heated oil, add tomato paste (3-4 tablespoons) and fry it slightly with continuous stirring.
- When the pasta is slightly fried, add water (100 ml) a little. You should get a sauce that, in consistency, resembles ketchup. Adjust the density yourself, adding water or tomato paste if necessary.
- When you get the right consistency, salt the sauce to taste, season with dry herbs oregano and basil (1/4 teaspoon each) and add a little sugar to taste so that the sauce is not acidic. Warm the sauce to completely dissolve the salt and sugar.
We collect and bake pizza
- Dust the table with flour and lay out the dough. Roll the dough into a thin circle from the center to the edges using a rolling pin.
- Sprinkle the back side of the round baking sheet (bottom) with flour and transfer the dough rolled out into a circle using a rolling pin. Gently shape the edges.
- Spread the sauce evenly over the dough, leaving the edges free.
- Put the portion of the prepared cheese on the sauce: both mozzarella and parmesan.
- Put the previously fried and already cooled minced meat on a bowl of cheese.
- On top of the minced meat, place the ham, cut into arbitrary cubes.
- Stack whole sausage mugs nicely on top and sprinkle with finely chopped previously fried bacon.
- Top with the rest of the cheeses: mozzarella and parmesan. For flavor, you can sprinkle pizza with a pinch of dried basil or Provencal herbs.
- Bake pizza in an oven preheated to 200 degrees for about 10-11 minutes. The pizza will be ready as soon as the uncovered sides of the dough are lightly browned.
- Garnish pizza with fresh leaves of parsley, cilantro, basil or arugula before serving. Do not hesitate, eat meat pizza hot.
