Step cooking
- We take 50 g of butter from the refrigerator and leave it at room temperature so that it softens. In a bowl, mix all the loose ingredients: 160 g of sifted flour, a pinch of salt, 6 g of baking powder (this is approximately 1 teaspoon with a good hill) and 60 g of cocoa powder.
- In a second bowl we drive 2 chicken eggs and beat them with a mixer until they increase in volume. Gradually, without stopping whipping, pour 150 g of sugar there and beat until it is completely dissolved.
- In a whipped egg mass, add a teaspoon of vanilla extract (if you do not find the extract, it is quite possible to replace it with a teaspoon of vanilla sugar or one gram of concentrated vanillin).
- Add the softened butter and beat the egg-sugar mixture for some more time until the mass becomes homogeneous. Add a loose mixture through a sieve in small portions and knead the dough. It will turn out not liquid, but not thick. It should hold well on the shoulder blade without spreading.
- We collect the finished dough in a bowl in a lump and cover the bowl with cling film, send it to the refrigerator for an hour. Meanwhile, we filter the icing sugar through a sieve.
- We prepare a baking sheet: we cover it with a silicone or Teflon rug (if any) or simply line it with baking paper. We proceed to the manufacture of cookies: pick a chilled dough with a teaspoon, form a ball from it with our palms and roll in icing sugar.
- Put the ball on a baking sheet. Repeat the manipulations with the rest of the test. We don’t put the balls very close to each other, as they will increase in size.
- Preheat the oven to 190 degrees and send a baking sheet with cookies to bake for 10-12 minutes. We take out the finished cookies from the oven, allow to cool on a baking sheet, and only then remove to a dish.

The finished cookie has an original look, a kind of craquelure effect - when the upper surface crackes, exposing the inside of a different color, which gives it a marbling effect, for which, in fact, the cookie got its name.
