- Pour 950 g of milk into the pan and send to the fire. It is very important to prepare ice cream from fresh, high-quality milk, preferably homemade, so that it does not curdle during cooking.
- Cut into small pieces 100 g of butter and send into milk. Butter, too, take quality, fresh. According to the recipe, we will use a small number of products, so each of them will affect the taste of the finished ice cream. Let the milk boil and melt the butter.
- In a separate bowl we send five chicken yolks, add 400 g of sugar and one tablespoon of starch, whisk with a mixer. We recommend using fresh eggs, buy them from a trusted farmer.
- Add 50 g of milk to the yolks and beat for 5-7 minutes. During this time, the mass will become lush, thick. Beat better with a mixer.
- Pour beaten eggs into milk with a thin stream. With constant stirring, let it boil and remove from heat. Pour cold water into a deep bowl and put in it a pan with the milk mixture.
- We stir occasionally, wait until it cools down. Then we pour it into molds and send it to the freezer. We recommend to withstand at least 6 hours, then the ice cream will become the desired consistency.
- We serve ready-made ice cream to children and adults as a favorite treat. You can add any fruits or berries to it. You can pour with any jam, caramel or melted chocolate.
Ice Cream Maker Tips
Before you mix beaten eggs with hot milk, equalize their temperature. To do this, mix the egg mixture and pour a fine stream of 200 grams of boiled milk into it. Then pour the eggs into the remaining milk. So the risk of egg folding is reduced to a minimum.
You can put a pot of hot ice cream in a bowl of cold water or ice. Be sure to stir the mass while cooling. So it will not only cool faster, but also remain uniform in consistency.
Before sending to the ice cream maker, put the mass in the refrigerator for 1 hour so that it does not become ice.
