Step cooking
- Pour 400 ml of well-chilled fat cream (from 33% fat and above) into a deep bowl. Pour half a teaspoon of vanilla sugar into cream. Beat the contents of the cup with a mixer until soft peaks, at the lowest speed. When the creamy mass doubles, increase the rotation speed of the nozzle, and beat for about three minutes until firm, firm peaks.
Whipping time depends on the amount of cream and the speed of whipping. Beat with a mixer should be extremely careful. If the product is “killed”, it will hibernate, break into fractions, and turn into butter and whey. - As soon as the mass is compacted, the rotation speed must be gradually extinguished. Continuing to whisk at low speeds, gradually and in small portions introduce 200 g of condensed milk into the creamy mass. This is about 2/3 of the standard canned condensed milk.
This operation is undesirable for a long time. The connection time of cream with condensed milk is no more than 20 seconds. The result should be a homogeneous, lush, and at the same time, light mass. If desired, chocolate chips or cocoa powder can be added to it. You will get ice cream with chocolate, or chocolate ice cream. - Transfer the finished creamy mass from the cup to a dry and chilled container or plastic vessel.
- Cover the container, and send the finished ice cream to the freezer for five hours.
- It is recommended to remove the ice cream container from the freezer, 15-20 minutes before serving the ice cream to the table.
Serving and decoration
Serve ice cream in portioned outlets in the form of balls. To form such balls is very simple with a tablespoon, after dipping it in hot water. When served with a dessert table, the balls of ice cream can be doused with fruit syrup, sprinkled with chopped nuts or chocolate chips. If desired, you can decorate each serving with fresh berries - strawberries, raspberries or cherries.
