Fruit and berry freezing
- In order to make sorbet ice cream, you need only frozen fruits. Therefore, the first step to create this goodness will be the preparation and processing of fruits and berries. The time required to freeze fruits and berries is not taken into account in the cooking time, because they can be frozen in advance.
- The prescription uses strawberries, raspberries, bananas and peaches. The technique for preparing for freezing is somewhat different. Peach should be washed and remove the stone, and then cut into slices. Just wash strawberries and raspberries (very gently and gently). Peel and cut the banana in circles. The freezing temperature should be -18 ° C and below. Therefore, pre-free up space in the freezer with the lowest temperature (usually they have a “quick freeze” section).
If you freeze the berries “for later”, they should be folded in small airtight bags (special ones are sold on a fastener); if you plan to use immediately for ice cream, then you can freeze them on a baking sheet, covered with a film.
Cooking strawberry + basil sorbet
- We measure out 60 g (50 ml) of condensed milk.
- We measure out 300 g of frozen strawberries. We leave a couple of pieces for decoration. Rinse and drain 4 basil leaves.
- Pour strawberries into the blender bowl, throw the basil and pour it all with condensed milk.
- Turn on the blender at the highest speed and beat until you get a perfectly homogeneous mash. If your blender is submersible, then you need to give strawberries 5 minutes for a slight thaw.
- We spread the resulting mixture into a mold for freezing. It can be a plastic sudok, a paper cup, a silicone mold - in general, everything that can be put in the freezer.
- Top with strawberries and basil. We put in the freezer for 5-6 hours.
Cooking banana + cocoa + mint sorbet
- We measure out 300 g of frozen bananas. We rinse and drain a sprig of mint (4 leaves).
- Pour 4 tablespoons of cocoa powder. It is better to sift through a strainer.
- Pour all of the above products into a blender bowl and pour 60 g of condensed milk.
- Beat at high speed until smooth.
- Pour (a rather liquid mass is obtained compared to the previous sorbet) in a container for freezing and decorate with bananas and mint.
- Sent to the freezer for 5-6 hours.
Cooking raspberry sorbet
- We measure out 300 g of frozen raspberries and 60 g of condensed milk.
- Beat the ingredients in a mixer often.
- Spread in a container for freezing.
- Decorate with raspberries. Let it stand in the freezer until it completely hardens for 5-6 hours.
Cooking peach + lime sorbet
- We measure out 300 g of frozen peaches.
- We measure out 60 g of condensed milk.
- Rub the zest of 1 lime on a fine grater (only the green part).In a blender bowl, whisk together all of the listed ingredients together until smooth.
- We put it in the form and send it freezing in the freezer for 5-6 hours. You can decorate with a slice of peach and lime.
Serving Sorbet
- We get the forms for freezing from the freezer. Let stand for about 5 minutes so that the ice cream melts a little.
