Step cooking
- In a deep heat-resistant bowl, pour 150 ml of cream of 10% fat and put on low heat. Cream must be brought to a boil, but in no case boil.
- In the bowl for whipping, separate 2 yolks. Beat them at high speed until lightened and increase in volume.
- Continuing to beat the yolks, add 3 tbsp in parts. l sugar to dissolve.
- At the end, add 10 g of vanilla sugar, beat for a few more minutes.
- Remove the hot cream from the stove and portionwise introduce the yolks with sugar, constantly kneading with a whisk so that the yolks do not curl.
- Then this mass should be cooked until thickened in a water bath. To do this, take a pan of a larger diameter, pour a little water and put on fire. We put a bowl with a creamy egg mixture on top and, stirring constantly, cook the cream. The main thing is that the bottom of the bowl does not touch boiling water. We check the readiness of the cream as follows: dip a spoon into the cream, draw a line with your finger: if the edges do not come off, then the cream is ready.
- Remove the finished cream from the stove and cool at room temperature to 25 - 30 degrees. To speed up the process, you can put a bowl of cream in cold water with ice.
- Put 33% cream, a whipping container and a whisk in the refrigerator for 10 - 15 minutes, so that they are well cooled and whipped more easily. While the cream cools, we take the cream out of the refrigerator and beat until thickened, but not too much.
- Combine the whipped cream with the cooled cream in several passes. Beat with a blender is not necessary, carefully mix with a spatula or whisk.
- The creamy mass should be smooth and uniform. Tighten the bowl with cling film or close the lid and send to the freezer for 7 - 8 hours. Every hour, ice cream must be mixed with a whisk or spoon so that it hardens evenly and becomes lush and airy.
- When the ice cream has acquired the desired consistency, we form balls with a special spoon for ice cream and put it on wafer cups. Can be served in a bowl.
- Top with ice cream pour melted dark or milk chocolate and try. Enjoy your meal!
