Making biscuit
- First, preheat the oven to 200 degrees. Beat the mixer with 3 eggs at room temperature until splendid.
- Add 180 g of sugar to the beaten eggs and beat for about 3 minutes to disperse the sugar.
- Grate two medium carrots on a fine grater.
- Add the grated carrots to the egg mixture and pour 2 tbsp. l vegetable oil.
- Sift the flour, first add 120 g of flour to the mixer bowl to the rest of the ingredients. Knead well so that the flour is evenly dispersed.
- Pour 0.5 tsp into a glass. soda, pour 1 tbsp. l vinegar to soda quenched, stir with a spoon.
- In the mixer bowl, add the remaining 75 g of flour, quenched baking soda to the dough, and mix again.
- Take a detachable baking dish with a diameter of 24 cm, line it with parchment paper. We spread the finished dough in a baking dish, put in the oven, reducing the temperature to 180 degrees, bake for 30 - 40 minutes.
Cooking cream
- Fat sour cream is sent to the bowl of the mixer, add 1 tbsp. l vanilla extract, beat at medium speed.
- Add 8 tbsp. l icing sugar and continue to whisk.
- When the powder intervenes well, add 24 g of thickener for sour cream, whisk until the cream thickens. The cream is ready.
Cooking cream for decoration
- In order to make the cake festive and even more beautiful, we will make a no decor in the form of carrots from a multi-colored cream. To do this, you need dry food colors in two colors - orange and green.
- We take two glasses, in one pour 2 g of orange dye, in the other - the same amount of green.
- Then pour 0.5 tsp into each glass. cold water and mix thoroughly.
- We take two bowls. In one we impose 1 tbsp. l sour cream and add a few drops of diluted green dye, knead well.
- In the second bowl add 4 - 5 tbsp. l cream and pour a few drops of diluted orange dye, mix thoroughly. If you are not satisfied with the color, you should add a drop of dye until the color suits you.
Assembly and decoration of the cake
- We take out the baked cake from the oven, separate it from the walls of the mold with a knife, remove the split ring and release the cake.
- In order to give the biscuit an even shape, turn it over to the grate, press down a little, remove the bottom of the form, parchment and leave to cool.
- When the biscuit has completely cooled, we cut it into two or three cakes with a bread knife.
- We shift one cake to the dish, spread 3 - 4 tbsp on top. l cream, silicone spatula evenly distribute it around the perimeter.
- Cover with a second crust on top, squeeze a little. With the remaining cream, coat the top and sides of the cake.
- Sprinkle the sides of the cake with 100 g chopped walnuts.
- We send the cake for impregnation in the refrigerator for 3 to 4 hours. Decorating a cake is better after it is completely saturated.
- In order to decorate the cake and make the decor of carrots, you need to visually divide it into 8 parts.
- In one pastry bag we place the cream of orange color, in the other - green. First we make carrots - stepping back from the edge of the cake a couple of centimeters, we squeeze out an orange carrot with a snake so that it is 3 cm thick on top and goes down to narrow.
- Thus we form 8 carrots.
- Green cream from the culinary bag will make the leaves in any shape.
