Ingredients

Peeled walnuts | 70 g |
Lemon | 1/2 pcs. |
Orange | 1 PC. |
Baking powder | 1 tsp (with a slide) |
Salt | 1 g |
Cinnamon | 1/2 tsp |
Step cooking
- We lay the peeled walnuts (70 g) on a baking sheet and put in the oven, preheated to a temperature of 160 degrees, for 5 - 7 minutes.
- After a specified period of time, we remove the nuts from the oven and transfer them to a small bowl.
- To hot nuts add 1 tbsp. l butter and a pinch of salt. Mix everything thoroughly.
- Set aside a small piece of butter to lubricate the mold, and whisk the rest with a mixer until a uniform, creamy state is obtained.
- Continuing to whip the butter with the mixer, gradually add 100 g of sugar to it.
- After sugar, add 3 chicken eggs to the container (if the eggs are large, then 2 pieces are enough) and once again beat everything thoroughly until smooth.
- Carrots (about 3 medium carrots) are washed, peeled and grated on a fine grater.
- Add the juice of half one lemon (about 20 ml of juice) to the carrots.
- Then we mix the carrots seasoned with lemon juice with the mixture we prepared earlier.
- On a grater, wash the zest of one orange and also add to the mixture.
- Then we send there the walnuts and mix everything thoroughly.
- Mix wheat flour (150 g) with 1/2 tsp. cinnamon and 1 tsp. (with a slide) of baking powder.
- Gradually “introduce” the flour into our carrot mass, constantly mixing it until smooth. The resulting dough should have a semi-liquid consistency.
- Lubricate the cake pan with butter and lightly sprinkle with the remaining flour.
- We shift the dough into it and slightly level it with a spoon or spatula.
- We put the cake pan in the oven, preheated to 160 degrees, for 30 - 35 minutes (cooking time may vary depending on the capacity of the oven and the material of the baking dish, so check the cake’s readiness with a wooden skewer).
- When the cupcake is ready, turn off the oven, remove it from the mold, let it cool slightly and cut it into portions. Enjoy your meal!
Ways to decorate and serve dishes
You can decorate such a cupcake with:
- walnuts and orange zest, setting aside a small amount to the side during cooking;
- powdered sugar;
- chocolate icing.
The options for decorating are incredibly many, it all depends on your imagination! Serving such yummy is recommended with warm milk.
