Step cooking
- Before cooking, pour raisins with boiling water, cover with a lid and leave to swell. Grind nuts into large crumbs using a knife, rolling pin or chopper. Peel the carrots, wash and chop. It is recommended to grate carrots on a fine grater, and not use, for example, a blender. Carrots chopped in a blender will turn into a thick slurry, which is not suitable for dough. And with grated carrots, the dough will turn out more tender and not clogged. Grated carrots for cookies you should have 0.5 cups.
- Then mix in a deep container all dry ingredients: finely grated carrots, hercules, chopped nuts, coconut, sugar, flour, together with baking powder and salt. Optionally, add vanilla extract or some vanilla sugar. Mix the contents well so that all the ingredients are evenly distributed.
- Add vegetable oil and raisins to the dry components along with the water in which it was infused.
- Mix well with your hands. If your dough turns out to be a little dry and crumbly, add a little water and continue to knead.
- As the dough reaches the desired consistency, take a small amount of dough (about 1 tbsp.) And form a round cookie with a thickness of about 1 cm.
- Spread cookies on a parchment-covered mold and send to bake in an oven preheated to 180 ° for 20 - 25 minutes. Ready cookies should be rosy.
- Then get the cookies out of the oven and cool. Before use, you can sprinkle with powdered sugar.
Did you know? Cookies prepared according to this recipe will turn out to be very crispy, brittle and friable. If you want cookies to be more tender and airy, it is recommended to add an egg, sour cream or milk to the dough.
