Step cooking
- Rinse the milk (1 kg) in several waters and remove all existing veins. Cut too large milk into 2 parts.
- Salt the milk using about 3 pinches of salt, and mix well to distribute the salt evenly. Break chicken eggs into a deep bowl (3-4 pieces, depending on size), salt them (0.5 teaspoon of salt) and beat with a whisk or fork so that the proteins mix with the yolks.
- Fill one deep plate with flour (7-8 tablespoons), and pour breadcrumbs (7-8 tablespoons) into the second.
- Put the pan on the fire, dry and pour vegetable oil (30-50 ml). Heat a frying pan with oil over high heat, then reduce heat to a minimum.
- For convenience, arrange the bowls with flour, beaten eggs and breadcrumbs in a row. Roll each milk completely first in flour, then in eggs, and then in breadcrumbs. This can be done by hand or using two forks at a time, which is very convenient. Spread the breading covered with breading on a preheated pan so that they do not touch each other, and fry for at least 10 minutes on one side, then turn over with two forks or a spatula (to your convenience) and fry for another 10 minutes, covering the pan with a lid.
- When removing ready-made milk from the pan, lay them on a plate covered with paper towels so that they absorb excess oil.
- So gradually, in small batches of 3-4 pieces, overcook all the available milk (1 kg). Add oil to the pan as needed.
Food Options
Serve the salmon fish fried in batter, warm, decorating the dish with lemon slices and sprigs of fresh herbs. Soy sauce, tartar sauce, mayonnaise or mustard are combined with fried milk. Boiled potatoes in the form of mashed potatoes, or rice, are ideal as a side dish.
