Step cooking
Capelin preparation
- Since capelin is sold freshly frozen, it must be thawed before cooking, leaving it at room temperature for half an hour on a plate.
- We take 500 g of fresh capelin, clean it. We make an incision along the ridge from above the head. Pull the head and pull out the intestines. We press the abdomen with our fingers, lead to the head, squeeze out the remaining insides. Thus we clean all the fish.
- Well-washed fish.
Batter
- Break 2 eggs into a bowl.
- To them we add 2 tbsp. l mayonnaise.
- Pour 1 tsp. salt. There we put 0.5 tsp. ground black pepper.
- Mix everything well, beat until smooth.
Breading
- Mix 100 g breadcrumbs and 2 tbsp. l sesame seeds.
- Mix well so that the seeds are evenly distributed among the crackers.
Cooking fish
- We put the pan on the fire, pour 40 - 50 ml of sunflower oil into it, more can be, it all depends on the diameter of your pan. Heat the oil in a pan.
- Take the fish by the tail. Dip it first in batter, then roll in breadcrumbs so that they cover all the fish.
- We send the fish to boiling oil in a pan. The fish should be fried in oil, then a crisp is obtained.
- So do with all the fish until the pan is full. Do not put it tightly tight, there should be a distance so that they do not stick together with each other and fry well. Fry over medium heat until golden brown for 3 minutes on both sides. We do not cover the pan with a lid.
- We take out the fried fish and put it on a paper towel so that excess oil is absorbed into it.
- We do the same with another portion of fish. Add oil, roll and fry. Capelin in batter is ready. The result was a crispy, beautiful, mouth-watering crust with sesame seeds.
How to decorate a dish before serving
- Serve capelin is best with herbs and lemon.
- You can put fish on lettuce leaves.
- Sprinkle with chopped dill or just put dill branches near the fish.
- Cut the fresh cucumber into rings, put the dishes on both sides of the fish on the sides.
- Put sprigs of parsley on top.
- Cut the lemon into slices and put next to the fish.
- For lovers of onions, put green onion feathers or onions, sliced in rings and soaked in vinegar.
