Step cooking
- Before cooking, defrost and rinse the capelin under running water. If desired, you can gut the fish and cut off the head.
- Pour about 70 g of flour into a glass, then add 0.5 tsp to it. salt and as much black ground or lemon pepper. Mix everything well.
- Carefully pour the capelin in a plastic bag and pour flour into it. Then gently mix the flour with the fish, shaking the bag so that the capelin does not break. In such a simple way, you will be able to dump all the fish in a flour in a short time at once.
- Cover the pan with parchment paper and brush in a small amount of vegetable oil with a brush or spoon. If the oil is poured, the fish will drown in it, and a crisp will not work. Preheat the oven to 200 ºС. Then put the fish on a baking sheet and send to bake for 25-30 minutes. 10 minutes before cooking, grease the capelin on top with vegetable oil, no need to turn it over. So you get a beautiful crispy golden crust. Do not overdo the fish in the oven, so as not to dry.
In order to neutralize the specific smell of capelin, you can lightly pour lemon juice on it before you roll it in flour. If you don’t have flour, but you have bread crumbs, then mix them with fish. You can also use some of your favorite fish spices.
Ready-made baked capelin can be served as a hot and cold snack, or as a full lunch or dinner. Rice or mashed potatoes are good for a side dish, and the dish goes well with fresh vegetables. You can decorate the fish with finely chopped greens and a slice of lemon.
