Step cooking
- Cover the baking sheet with foil, which with a silicone brush, grease with vegetable oil, using odorless oil. Enough 1-1.5 tablespoon.
- Wash capelin (1 kg) well in several waters and let drain. It is not recommended to clean (gut) capelin, as fried capelin is much better cleaned than fresh.
- Pour the flour (1/2 part of the glass) into a deep bowl, add salt (a teaspoon), ground black pepper (1/2 teaspoon) and, if available, season the lemongrass (teaspoon). Stir all the ingredients.
- Turn on the oven to preheat 200 degrees. Roll capelin in flour with spices and place tightly on a baking sheet covered with foil and oiled.
- Put the filled sheet in the preheated oven for 15-20 minutes.
- After the specified time, remove the pan with fish from the oven and very carefully, using a silicone brush, generously grease the odorless top of each fish with oil. This is necessary to get a crispy golden crust. Switch the oven to the “Grill” or “Convection Grill” or “Top Blowing” mode and put the baking tray with capelin in the oven for another 10 minutes to make the fish brown.
- Remove the rosy capelin from the oven, and drip the lemon juice on a hot one, squeezing it directly onto the fish from 1/4 of the lemon. Capelin will be especially tasty if after cooking let it stand for 20-30 minutes.
Decoration methods and serving options
Capelin baked in the oven is served both hot and cold. Remove the fish from the pan using a spatula and place on a large plate. Sprinkle capelin with finely chopped parsley or chives on top.
A classic combination of fish and mashed potatoes is suitable as a side dish. A good side dish for baked capelin is boiled rice with white sauce or red beans. For baked capelin, a salad of fresh vegetables based on cabbage, as well as baked (eggplant, bell pepper, tomatoes) or stewed vegetables, is also suitable. A perfect complement to the dish will be dry white wine.
