Step cooking
- Wash, cut off the heads and tails, clean from the insides and again thoroughly wash 500 grams of fresh capelin.
- We peel off the husks, wash and chop two onions in half rings.
- Pour 400 grams of pure water into a large deep saucepan and put on the stove.
- Add to the water 10-12 pieces of allspice, 5 cloves, 10-12 peas of black pepper, 3 bay leaves, 20 grams of salt and 10 grams of granulated sugar.
- Bring the marinade to a boil and boil for 2-3 minutes. Remove from the stove and let cool completely.
- We put half of the peeled capelin tightly in a food container.
- Put a layer of onion on top of the fish.
- Then again a layer of capelin and a layer of onions.
- When the marinade has cooled, add 22 grams of vegetable oil and 22 grams of vinegar to it 9%.
- Stir the marinade, fill them with capelin and onion and close the container with a lid.
- We leave the dish to marinate for a day in the refrigerator.

- When you take salt or pickle capelin at home, remember that the richness and brightness of taste depends on the time spent in brine, marinade or a mixture of spices.
- Before serving, the fish can be washed if it spent a long time in marinade or brine.
- For a special taste, before serving you can sprinkle capelin with lemon juice, add chopped onions and fresh herbs to it.
- If you want to serve the fish nicely on the table, then take a large plate or dish and spread thinly sliced lemon slices around its perimeter.
- Such a dish as a side dish is perfect for boiled potatoes and a salad of fresh vegetables. Capelin can also be served as a snack.
- You can also make delicious sandwiches with capelin of spicy salting. For this, rye bread is ideal for you. You can supplement them with boiled egg, onion feathers, parsley.
