Step cooking
- To prepare the dish you will need 500 grams of pollock fillet, or it is possible to purchase the whole fish, which we cut on our own. If the fish has scales, then we clean it. Cut one fillet along the ridge and to the tail. Similarly, we separate the second pollock fillet from the bone. Cut off the fins from all sides. Carefully remove the skin from the pollock with your hands, you can help yourself with a knife.
- Before cooking pollock fillets, rinse with cool water and pat with a paper towel on both sides.
- Cut the fish fillet into pieces no larger than 2-2.5 cm.
- We turn to the preparation of vegetables. A couple of medium-sized carrots are cleaned, washed and rubbed on a coarse grater. If desired, you can chop 2-3 carrots with small straws. Put the grated carrots in a deep bowl.
- Peel 2-3 medium onions and cut into half rings. If you do not like a lot of vegetables, then their number can be reduced, or, on the contrary, take more carrots and onions.
- Pour 1 tbsp into the pan. l vegetable oil, evenly distributing it over the entire surface.
- We put chopped onions and grated carrots in a frying pan. We put on a small fire, covering with a lid. Fry until the onion has a golden hue and the vegetables become soft.
- Sprinkle the fried vegetables with half a teaspoon of salt. Also season the vegetables 1/4 tsp. thyme and ground turmeric. If you do not like these spices, you can exclude them from the recipe or add seasonings at your discretion. Mix seasoned vegetables well. Ready vegetables are transferred from the pan to a separate bowl.
- Pour another 1 tbsp into the pan. l vegetable oil and put on a small fire. When the oil warms up a little, put the pieces of pollock in a pan. Salted fish on top, and optionally sprinkle with spices for fish. If you have 2 pans, then you can cook pollock on one and at the same time fry vegetables on the other.
- When the fish on one side changes color slightly and becomes dull, it is turned over. Do not fry the fish until golden brown.
- When all the liquid from the fish has evaporated, spread a layer of vegetables on top of the pollock. We close the pan with a lid and cook the dish for 8-10 minutes. If after this time water still remains in the pan, then open the lid and keep the fish on low heat until the moisture has completely evaporated. We lay out the finished fish in portions and serve with boiled rice, potatoes or any other side dish.
