Step cooking
- Take a saucepan and pick up a deep bowl of such a size that you can make a water bath. In a deep pot, draw water and bring it to a boil.
- Meanwhile, while the water is boiling, grind 150 g of raw (unroasted) almonds in a coffee grinder or blender. Since almonds need to be ground to small crumbs, and not to the state of flour, a meat grinder is also suitable for grinding. In extreme cases, you can make almond crumbs with a knife, but it will take a lot of time and effort.
- In a deep bowl, mix the resulting almond crumbs and 300 g of sugar. If you wish, you can add a bag of vanilla sugar or a small pinch of vanillin.
- Take either four large or five small chicken eggs and separate the squirrels from the yolks. Pour the resulting protein into the almond-sugar mass and thoroughly mix all the ingredients with a spatula until a homogeneous mass is obtained.
- By this time, you should have boiled water. Remove the pot of boiling water from the heat and place a bowl of almond mass on it, forming a water bath. Stirring the mixture with a spatula, warm it to about 45 degrees.
- Remove a bowl of warm almond sugar from a water bath and let cool slightly. Next, enter 40 g of flour into the container, sifting it through a sieve.
- Mix everything thoroughly, forming a dough. It will turn out to be quite fluid and fluid.
- Pour the resulting dough into a pastry bag. If you don’t have it, then you can form a serving of cookies with a spoon. Do not spread portions of the dough too close to each other, as they will spread and can merge into one spot.
- Cover the baking sheet with baking paper and use a pastry bag to form small circles of almond dough. If you have no parchment in your kitchen, then just grease a clean baking sheet with butter and lightly sprinkle with flour.
- Send cookies to bake in an oven preheated to 150-160 degrees for 20-25 minutes.
- Remove the finished cookies from the oven and let cool, after which it can be served.
Decoration methods and serving options
Macaroons in itself look quite peculiar and do not need to be decorated. But you can always serve it on a beautiful plate or lay out in the form of a pyramid.
Take a large flat plate. On one half of it lay a portion of cookies, and on the other pour a little sugar powder and lay out a few almonds. Serving cookies on the table can also be with a portion of jam or condensed milk.
