Ingredients
- Wheat flour - 450 g
- Chicken eggs -2 pcs.
- Honey -100 g
- Sugar - 200 g
- Soda - 1 tsp.
- Salt - 1 pinch
- Butter - 70 g
- Sour cream, fat content 20% - 800 g
- Boiled condensed milk - 360 g
- Thickener for sour cream - 2 packets
Step cooking
- In a pan with a thick bottom, put the butter (70 g) and honey (100 g or 2 tbsp. L.) Cut into small pieces.
- Put the pan in a small fire or water bath and melt the ingredients until smooth, constantly mixing the mixture.
- Add soda to it (1 tsp). It is important for cooking to take real homemade honey. In this case, it will extinguish the soda, otherwise it will need to be pre-extinguished with vinegar or citric acid. If everything is done correctly, the mass should foam and increase in size.
- Add sugar (200 g) and mix thoroughly.
- Drive chicken eggs (2 pcs.) Into a deep bowl, mix with a fork, add to the honey mass and mix well again with a whisk.
- Put the pan with the ingredients on the smallest fire and leave until the sugar is completely dissolved, constantly stirring the mass.
- The mass should cool, then pour it into a deep bowl and add the sifted flour (450 g) in portions, first kneading the dough with a spatula, and then it can be transferred to the work surface and continue to knead by hand. The finished dough should be elastic and soft, so the flour must be added gradually.
- Form a sausage from the dough and divide it into 9 equal parts.
- Roll each part into a ball, transfer to a plate previously crushed with flour and cover with cling film so that they do not form a dry crust.
- Put parchment paper in the form of a large square on the table, put a circle of dough on top, crush with flour and roll out a thin round layer from it. To make the finished cake layer smooth, you can take a plate or a lid, put it on a layer and cut off the edges.
- Pierce the cake over the entire area with a fork so that it does not swell during the baking process, transfer the parchment with the workpiece to a baking sheet and send it to the oven, heated to 180 degrees, for 5-7 minutes. So do with each prepared dough circle. You can also make extra shortcakes from cropped edges. In total, it should turn out about 12 pcs.
- The rest of the dough must be baked and the resulting cake to grind to the state of crumbs, which is suitable for decorating the cake.
- Transfer sour cream (800 g) into a deep bowl, add thickener (2 packs) and mix thoroughly with a mixer.
- Boiled condensed milk is introduced portionwise into the resulting mass, stirring the cream with a mixer.
- Now you need to assemble the finished cake. At the bottom of a convenient surface or even plate, lay a tablespoon of cream and put the first cake on top. This will help fix the finished baking. Put cream on top of each cake and spread evenly over the entire surface.
- When the cake is assembled, it must be completely coated with cream and sprinkled with prepared crumbs.
- Send the finished cake to the refrigerator for several hours so that it is well soaked, and then you can serve it to the table.
