Step cooking
- Cooking the dough in a water bath. On a stove, over medium heat, in a saucepan for a water bath, set the water to boil. In a suitable bowl, add sugar (150 g), honey (120 g), butter (100 g). We put in a pan with boiled water and mix until sugar dissolves. This may take 7 to 10 minutes.
- While sugar and butter dissolve, beat 2 eggs. Beat for about 3 to 5 minutes.
Did you know? To prepare the dough, it is worth using liquid honey (flower or linden). Do not take buckwheat or acacia - cakes with them will be a little bit bitter. - Add beaten eggs to honey and mix quickly so that the eggs do not boil. Add 1.5 tsp. soda and mix, the mixture will begin to increase in volume.
- Sifted flour is added gradually, 250 g of flour in a bowl with the mixture. Constantly mixing, prepare the dough until it begins to darken and increase in volume.
- Then remove the dough from the heat. Knead the dough with the remaining 150 g of flour by hand.
- Wrap the finished dough in cling film and leave in the refrigerator for 40 - 60 minutes. Get the dough from the refrigerator, roll the sausage and divide into 8 identical parts.
- Turn on the oven 180º. Prepare parchment paper. The dough will be conveniently rolled out directly on paper. To prevent paper from slipping, lay it on a damp surface. Roll out the first piece of dough. Cut a circle with a flat plate. We bake the scraps of dough along with the cakes and then use them to decorate the cake.
- Bake the cake until light brown in about 4 minutes. While the first cake is baked, roll out the second. After the second, the third. Thus, bake all eight cakes and stack them on a flat surface. After removing the cake from the oven, pierce it with a fork in several places.
Important! Do not get distracted while baking cakes. Cakes are baked quickly. If you do not keep track, they can burn out. - Beat sour cream, adding sugar in it a little. Beat the mixture for 10-15 minutes until a lush, thick cream is obtained and sugar is completely dissolved.
- We spread the cakes on a flat plate, smearing them with cream. We also grease the plate with a small amount of cream so that the cake does not slip on the plate.
- The topmost cake is also smeared with cream. Grind the cake layers in a blender. Decorate them with a cake on all sides.
- Put the finished cake in the refrigerator for the night or for 8 hours.
