Step cooking
Cake dough
- In a pan, mix eggs, sugar, butter and liquid honey. Mix everything thoroughly until smooth.
- We put the pan on a slow fire and wait for the complete dissolution of sugar, not forgetting to stir the mass.
- When all the sugar has dissolved, add soda, mix and keep on fire for another 30-40 seconds.
- Remove from heat and begin to mix a little pre-sifted flour. At first, while the dough is liquid, this can be done with a spoon, and when it becomes more dense - with your hands.
- Ultimately, you should get a soft, not very cool dough.
- We roll the dough into a sausage and divide into 8 equal parts.
- We roll the parts into balls, sprinkle with flour, cover with cling film and put in the refrigerator. While the dough is “resting”, prepare the cream.
Custard
- In a small saucepan, mix the flour, sugar, vanilla sugar and eggs, grind into a homogeneous mixture.
- Add a little milk, stir the mass until smooth.
- We put on a small fire and wait for the cream to begin to thicken and boil, not forgetting to constantly stir.
- Once the cream has boiled, remove from the stove, add the butter and stir until it is completely dissolved.
- Cover the cream with a film so that it lies on the surface of the cream. This is done so that a film does not form during cooling. Leave to cool to room temperature.
Bake cakes and collect the cake
- We take one ball of dough from the refrigerator and thinly roll them on a floured surface or directly on parchment paper.
- Transfer the cake to the baking sheet directly with paper and bake in the oven preheated to 180 degrees Celsius for 3-4 minutes or until golden brown.
- Immediately after baking, put the necessary shape on top and cut the cake outline. Trimming should not be thrown away, we still need them for sprinkling cake.
- In the same way, bake the remaining cakes.
- We collect the cake, greasing each cake with custard and covering with the next.
- Grease the sides of the cake with cream.
- Grind the cuttings from the cakes in a blender to the state of crumbs.
- Sprinkle crumbs of cake on top and around the edges.
- The cake is ready! We clean in the refrigerator for at least 1-2 hours for impregnation.
