Step cooking
Dough
- First we need to make a water bath. To do this, fill a large pot with half running water and send it to the stove. On top of a large pan we put a smaller container and make sure that the bottom does not in any way touch the water. Turn on the stove and warm the liquid thoroughly. In a container installed above the water we spread 60-80 g of honey. It is advisable that honey have a neutral taste, since it is the taste of the preparing cake that depends on it.
- On top of honey, spread 180-200 g of butter. Instead of butter, margarine is acceptable.
- Pour 300-350 g of powdered sugar there. Icing can be replaced with granulated sugar.
- Lightly mix all the components, after which we leave them to warm up to a liquid state.
- Meanwhile, break three chicken eggs into a deep bowl. We add 11 g of baking powder and 8-10 g of baking soda there.
- Beat the mixture with a large whisk.
- As soon as the mass becomes homogeneous, pour it into the honey mixture.
- We boil the egg-honey mass in a water bath until it increases in volume and acquires a uniform consistency.
- Turn off the stove and, without removing the pan, add about 400 g of flour to the honey mixture, stir.
- Then add another 400 g of flour and mix thoroughly. When it becomes difficult and inconvenient to stir the mass, then remove the small pan from the water bath and continue kneading.
- Add the remaining flour in small portions and knead a homogeneous dough. Some housewives take 1 kg of flour for this cake in total, so carefully monitor the consistency of the dough. Stop adding flour at the moment when the dough stops sticking to your hands, and also acquires a uniform, soft texture.
Cakes
- We divide the finished dough into two identical parts, after which we divide each half into two equal pieces.
- We roll each part into a small sausage, and then we divide each of them into 5 equal parts. As a result, we should get 20 blanks for cakes.
- We take one blank and roll it into a thin layer. Using a regular cover with a diameter of 20 cm, we cut out a neat circle, and set the trim aside.
- Formed cake spread on a hot dry frying pan and fry it on both sides, like pancakes. During frying, the fire should be below average, also be careful when turning the product so as not to violate its integrity.
- We lay the finished cake on a flat plate or cutting board. We do the same with the rest of the blanks.
- Spread the trimmings on a baking sheet and send them to the oven.
- Bake the trimmings until cooked, and then grind them to the state of crumbs in the blender bowl.
Cream
- While the cakes are cooling, prepare the cream. Mix 850-900 g of sour cream and 200-250 g of powdered sugar.
- Stir the ingredients well until a homogeneous consistency is obtained.
Making a cake
- We grease the bottom of the dishes on which we will collect the cake with a small amount of cream so that the cake does not fidget.
- Put the first cake on top of sour cream.
- Abundantly lubricate the workpiece with sour cream.
- Spread the second cake on top, which is also lubricated with cream.
- Thus, we lay out all the workpieces, collecting a tall beautiful cake. After laying out the last cake, the remaining sour cream grease the top and sides of the product.
- Sprinkle greased cake with previously prepared crumbs. Formed treats are sent to the refrigerator for at least 12 hours.
- After this period, we make a beautiful pattern with melted chocolate.
