Step cooking
Training
First prepare the fish: it needs to be cleaned, the entrails, head and tail removed, washed, then cut into portioned pieces. Rinse the cut fish well again and soak in cold water for 1-2 hours to wash the blood. Drain the water. Onions cut into thin rings or half rings.
Pickling
- Put 1 bay leaf, 5-6 peas of black pepper, ¼ chopped onion, put pieces of fish on top and salt it well (about ¼ tsp. Less or more, depending on size) on the bottom of the container where the silver carp will be pickled capacity).
- Next, repeat the layers - lavrushka (optional), pepper, onion, fish and salt, until we lay out the whole silver carp.
- Pour 1 cup into the container. 9% vinegar to lightly cover the fish (vinegar can be added if necessary). Some recipes advise diluting 9% vinegar with water in a 1: 1 ratio. Squeeze the contents with some sort of oppression (you can take a suitable, clean jar of water) or just close the lid and leave at room temperature for 4 hours, mix and leave for another 4 hours.
- After 8 hours, drain the vinegar, no need to rinse the fish. Pour in a silver carp 100-150 ml of vegetable oil (the amount of oil depends on the amount of fish), close the lid tightly and refrigerate for 24 hours.
- Now you can put slices of fish and onions on a plate and treat everyone. Enjoy your meal!
Did you know?
- It is better to buy a large silver carp weighing more than 2.5-3 kg - it has fewer small seeds, the flesh is more tender, moderately oily.
- Silver carp can be baked, boiled, stewed, marinated, it makes a delicious jellied filling for fish pies.
- If you want to make the taste of pickled fish more piquant, add a couple of chopped garlic cloves with vegetable oil.
- The head, tail and fins of silver carp can be used for cooking fish soup.
- Fish in general and silver carp in particular are very useful because they contain a significant amount of protein, omega-3 and omega-6 unsaturated fatty acids and trace elements. Therefore, silver carp is recommended for diet food.
