Step cooking
- First, prepare the brine. Pour 1 liter of water into the pan. Add 2 tablespoons of salt, 200 g of sugar, 200 ml of vinegar 9%. Mix and set on fire.
- Bring to a boil. Turn off and let the brine cool to room temperature. This amount of brine is enough for 3 cans of 1 liter.
- During this time, we prepare jars: wash and sterilize. Wash cans thoroughly using soda or mustard powder. Then we proceed to sterilization. The most common method is steam sterilization. To do this, take a wide pan, pour water into it, throw the lids on the cans there, put the oven grate and place the cans with its neck down. Turn on the fire, and after boiling water, steam sterilize for about 5 minutes. The second method is sterilization in the oven. We install the washed cans on a wire rack in a cold oven upside down. Here we spread the lids on the twist. For covers with elastic bands, this method is not suitable, since elastic bands can melt. They need to be boiled. Set the oven to 100-120 degrees and sterilize for about 10-15 minutes. The third way is microwave sterilization. Pour water into cans at a level of 1.5-2 cm from the bottom and put them in the microwave. Power select 800 W, and turn on for 3 minutes. At this time, the water in the banks will boil and evaporate. Before use, pour water from cans.
- We clean the garlic (6 cloves) and wash it. Of seasonings, we do not need anything else. This is the secret to the simplicity of this recipe for pickled cucumbers. Cucumbers (2 kg) are thoroughly washed and dried. Cut the petiole and a little lower part. We put cucumbers on the banks.
- Fill with a cooled brine.
- We put all 3 jars of cucumbers in a pan. Cover with sterilized lids. Fill with water.
- We put a pan with banks on the fire. We wait until the cucumbers in the banks change color. In time it will take 7-10 minutes.
- As soon as the cucumbers change color and there are no green spots, we take it out of the pan with a towel or special tongs and roll up the jars. If you have the neck of the cans on the thread, then simply twist them tightly. If you have ordinary cans, then roll up the lids with a seaming key. Then we turn over the cans and wrap it well. Leave it until cool.
- Cucumbers are stored very well, even at room temperature. It turns out amazingly delicious and crispy.
