Step cooking
- If your squid is frozen, you must defrost them before cooking. Next, we clean and wash the carcasses.
- We put a pot of water on the fire and salt well. Squids are boiled in boiling water. As soon as the water boils, hold them for a minute and a half or two. The main condition is not to digest. Otherwise they will be tough.
- We take the finished squids out of boiling water with a slotted spoon, put on a plate and let cool.
- At this time, we take a little salt to taste (an incomplete teaspoon) and pour into a bowl, add sugar, pepper, allspice, Italian herbs, vinegar and vegetable oil.
- The resulting mixture must be mixed well. The marinade is ready.
- When the squid has cooled, cut them into thin rings or half rings, if desired.
- Put the squid into a bowl. Then add a bay leaf to them.
- Stir the marinade with a spoon and fill it with chopped squid.
- All is well and gently mixed and covered with cling film or a plate. We send to the refrigerator for at least 2 hours. The longer the dish will stand in the refrigerator and marinate, the tastier it will be. You can even leave all night.
- Before serving, add finely chopped fresh dill and mix well. Enjoy your meal!
Cooking options
There are other cooking options for a cold appetizer such as pickled squid. To your taste, you can experiment with the composition of the ingredients:
- You can add lemon juice instead of vinegar.
- You can take water and quite a bit of vegetable oil.
- Vinegar is sometimes replaced with lemon juice.
- Korean-style pickled squids are cooked with carrots, onions, and garlic.
- From spices you can add "Provencal herbs", paprika, ground ginger, mustard seeds, chili, coriander, oregano, garlic.
- You can use apple or wine vinegar.
- Soy sauce is sometimes used.
- Greens can be decorated with lettuce, cilantro, parsley or green onions.
