Boiled water | 1 liter |

Soy sauce | 50 ml |
Rosemary | 3 branches |
Dried basil | 2 tsp |
Celery root | 1/3 root |
Sunflower oil | 4 tbsp. l |
Paprika | 0.5 tsp |
Balsamic dressing | 50 ml |
Ground black pepper | 1 tsp |
Step cooking
- We break 10 branches of cherry into pieces about 10 cm long. Pour 1 liter of boiled water into a 2-liter pan, add branches to it and put on a large fire. We wash 1 lemon under running water and cut it into small pieces. When the water boils, let it boil for 2 minutes, then carefully pour boiled duck carcass on all sides with boiling water.
- In a deep container, pour leaves with 3 sprigs of rosemary, add 50 ml of soy sauce, 4 tbsp. l sunflower oil, slices of lemon, 1 tsp. ground black pepper, 50 ml of balsamic sauce, 0.5 tsp. paprika and stir well with your hands, squeezing in the process pieces of citrus.
- Add 2 tsp. of dried basil, stir, put the duck carcass in the marinade and carefully rub the liquid into it, paying attention to the entire surface and not forgetting to process the inside. We peel 1/3 of the celery root and rub on a coarse grater.
- Sprinkle the duck on top with the grated celery root, cover the container with cling film and place it in the refrigerator for 8-12 hours for pickling, periodically opening and rubbing the marinade into the duck and turning it to the other side.
- After 8-12 hours, we take out the duck and bake it in our favorite way.
Important!Before pickling, the duck carcass must be properly prepared, for this, cut off the tips of the wings so that they do not burn during baking, as well as remove the tail, which can ruin the flavor of the future dish. It is also worth trimming internal fat and taking out the hemp from the feathers if you find them on the surface of the skin.
