Step cooking
It is decidedly impossible to present the marinade recipe in isolation from the meat for which it is intended, so along the way you will find out how the rabbit pickled in this way is cooked.
- We take 2 large ordinary and 1 medium red onions, peel them from the husks and cut into quarter rings. So that they let the juice, well, crush them with your hands.
- We clean 4-5 cloves of garlic and crush them with a knife to increase the production of oils and juice.
- We combine onion and garlic in one bowl, add a pinch of seasoning “Pepper Mix” (or any other spices to your taste) and 1-1.5 tsp. salt. Mix everything thoroughly with your hands so that there is even more juice.
- We wash the rabbit carcass, dry it with paper towels and clean it of unnecessary unnecessary parts. Cut into portioned slices. Add onion with spices to the meat and mix well, rubbing the onion juice into rabbit meat. Leave to lie down for 1 hour.
- After this time, fill the rabbit with 2 liters of ayran and add 1 bunch of finely chopped greens, cover it tightly and send it to marinate in a cold place for 12 hours.
- Cover the baking dish with food foil and put pieces of meat on it, from which we remove the excess marinade, and wrap it in another layer of foil.
- We bake in the oven, heated to 200-250ºС. Time will depend on the weight and age of the rabbit. As a result, you get a very juicy tender rabbit, soft inside.
