Step cooking
Cooking dough
- Pour a glass of ice water into a small but deep bowl. You can pre-hold the water in the freezer so that its temperature drops to almost zero. Thanks to cold water, the dough will be elastic, manti will be able to keep in shape. Add a teaspoon of salt to the water, mix well to dissolve. Drive one chicken egg, mix.
- Sift 500 g of flour into a separate large bowl, in the middle we make a deepening. The dough can take more or less flour, it will depend on its moisture content and the size of the hammered egg.
- Pour the egg mixture into the recess, knead the dough until elastic.
- Then we sprinkle the work surface with flour, put the dough and knead it by hand. This will take about 15-20 minutes. When the dough is ready, wrap it with cling film, cover with a damp towel, leave it to rest on the table for an hour.
Cooking stuffing
- Now let's get the stuffing done. The filling for manti can be absolutely anything: from potatoes, pumpkins, any kind of meat. Today we will stick to the traditional recipe and will use lamb. Through a meat grinder with a large grill, we pass 350 g of mutton. If desired, you can cut it into very small cubes. Grind 150 g fat tail fat in the same way. We peel 500 g of onion, rinse, cut into very small cubes and send to minced meat.
- Add salt, black pepper to taste. We rinse a bunch of cilantro, chop finely, and send it to the minced meat.
- We mix it well with our hands. Then we cover the bowl with minced meat with cling film, make several punctures in it with a toothpick and set aside for 20 minutes.
Sculpt and cook manti
- Now we take part of the dough, roll out a layer of it, approximately 1 mm thick, and make the workpiece using a large diameter glass or a special ring with sharp edges.
- In the center of the obtained cakes we spread the minced meat.
- We connect the edges of the dough to each other as shown in the photo, and form the manti.
- We make manti from all the minced meat and dough.
- Pour water into a double boiler, send to the fire to boil. A bowl of a double boiler is greased with vegetable oil, put the billets, send to the pan, cover and cook for about half an hour.
- After that, spread the manti in a portioned plate. Add a little butter and sprinkle with herbs for beauty.
