Step cooking
Dough
- For 1 kg of sifted wheat flour we take 500 ml of hot boiled water, in which we first completely dissolve 1 tbsp. l salt. We combine the flour with water and begin to knead the dough: first we make it with a spoon, and then go to manual kneading.
- Sprinkle the work surface with flour and knead the dough for 2-3 minutes, then cover it with a clean deep bowl and leave for 20 minutes. We do not throw out all the flour that the dough has not taken - it will come in handy later on.
- After 20 minutes, knead the dough again for 2-3 minutes (it will already be more elastic and supple) and send "rest" for another 30 minutes.
- After that, again we knead the dough well, form a sufficiently wide sausage from it (about 5 cm in diameter), wrap it in a plastic bag so that air does not enter, and leave it to lie down for 10-15 minutes. The dough is ready.
Manti filling and modeling
- For the filling, take 1 medium cabbage, 2 carrots and 1-2 onions, rinse all this, remove the unusable parts and chop: finely chop the cabbage, rub the carrots on a fine grater, and chop the onion into small cubes. Add aromatic vegetable oil, salt and pepper to taste.
- We take out the dough for manti from the bag and cut it into portioned slices 1 phalanx of the thumb. So that the finished pieces are not weathered, cover them with cling film or put in a bag.
- Using a rolling pin, we roll out the workpiece into a square, squeeze the edges to make it easier to sculpt.
- On top we put 1 tbsp. l fillings and wrap the product, connecting the corners of the cake, located diagonally to each other.
- We pinch the remaining holes.
- We connect two corners of the resulting square.
- We spread the resulting manti into the mantle, the bottom of which must first be greased with vegetable oil. Steam for 35-40 minutes. They can also be cooked like dumplings in boiling water, but this is the least preferred method of cooking manti.
- We eat as a separate dish with herbs and vegetable salads. If you do not fast, you can add sour cream or even cook manti on a meat basis.
