- While cooking pasta, we are preparing the sauce. To do this, put 2 tbsp in a ladle or stewpan. l flour.
- 450 ml of milk is gradually added to the flour. When adding it, you need to thoroughly mix the ingredients with a spatula so that no lumps form. It is better to use milk at room temperature. We put the saucepan with sauce on the stove, including minimal heat. Cook the sauce until it thickens. At this time, you need to constantly stir it with a spatula.
- On a fine grater we rub 200 g of hard cheese and 100 g of semi-hard. For the latter, it is better to use a coarse grater. To make the pasta sauce tasty, you should choose cheeses of different varieties.
- After the sauce thickens, turn off the heat and add 2 grades of grated cheese. When exposed to high temperature, the cheese melts quickly. To make the structure of cheese sauce softer and more glossy, add a few teaspoons of water in which pasta is cooked. We transfer the finished pasta to a colander and drain the water. Then we transfer them to a pan or pan and put on the stove on medium heat.
- Add the resulting cheese sauce to the finished pasta. Mix everything well with a spatula so that the sauce is evenly distributed.
- Macaroni and cheese are ready, put them on a plate. At the end of cooking, sprinkle the dish with a small amount of ground paprika. If you like a hard cheese crust, then you can put the finished pasta with cheese in a heat-resistant bowl, sprinkle with grated cheese on top and put in the oven for 15-20 minutes.
