Step cooking
- Prepare the vegetables. Rinse all vegetables thoroughly, peel 1 medium onion, 1 clove of garlic and 2 carrots. Take the onion and cut it into small cubes.
- Cut bell pepper in half, carefully remove the core. Cut each half into strips 0.3-0.4 cm wide, then cut across.
- Cut two medium carrots into strips of the same size as pepper.
- In the same way, cut 125 g of green beans.
- 150 g of broccoli cabbage, divide into inflorescences and cut into 2-4 parts.
- 16 cherry tomatoes cut into 2-4 parts, depending on size.
- Cut a clove of garlic into a small cube. Finely chop 50 g of parsley. Grate hard cheese on a fine or medium grater.
- Cut 300 g of chicken into small thin slices.
- Take a pan, pour into it 1.5 liters of water and 1 tbsp. l olive oil, add 1 tsp. salt and bring to a boil. When the water boils, add 150 g of pasta and boil them in accordance with the instructions on the package. When the pasta is ready, measure 50 ml of water in which the pasta was cooked in a separate container. Drain the rest of the water, rinse the pasta under cool water with a sieve.
- Take a pan, add 1 tbsp. l olive oil, warm well. In hot oil for 20 seconds. Sauté chopped garlic and ¼ tsp. ground black pepper.
- Next, add chopped chicken to the pan, fry for about 5 minutes, add 1 tsp. salt, mix and fry for another 5 minutes. Put the finished meat in a separate container.
- In the same pan where the fillet was fried, add another 1 tbsp. l olive oil and chopped onions. Fry until transparent for 1 minute.
- Add chopped carrots to the onion and fry for another 2 minutes.
- There, with an interval of 1-2 minutes, add green beans, broccoli and bell pepper. Cover, reduce heat and simmer for 5 minutes.
- After 5 minutes, add 1 tsp to vegetables. dry Italian herbs, 150 ml cream 20% fat, 0.5 tsp. salt and 50 ml of pasta water. Cover again and simmer another 5-7 minutes over low heat.
- Then add the previously fried chicken breast, boiled pasta, chopped cherry tomatoes, chopped parsley and grated hard cheese.
- Mix everything well. Pasta ready, bon appetit.
Cooking Tips
- For every 100 g of pasta you need to take 1 liter of water.
- Follow the order of adding vegetables indicated in the recipe. So all the vegetables are cooked at the same time, and retain all their vitamins.
- Use any pasta as you wish, but from durum wheat the product is much healthier.
- Vegetables can be changed at your discretion: you can add zucchini, young corn or green peas. You can also take a frozen mixture of your favorite vegetables.
- Instead of parsley, you can take greens that you like.
- Olive oil can be replaced with any vegetable or butter.
- A mixture of Italian herbs can be replaced with spices that are more to your taste.
