Ingredients
- Blackcurrant - 100 g
- Butter - 100 g
- Milk - 120 ml
- Wheat flour - 220 g
- Sugar - 180 g
- Chicken Egg - 1 pc.
- Baking powder - 1 pinch
- Powdered sugar - 1 tbsp. l
Step cooking
- Place butter in an amount of 100 grams in the microwave for 5-7 seconds, so that it melts. Pour the melted butter into a deep container, for example, in a salad bowl.
- Add 180 grams of granulated sugar to the salad bowl to the oil, take a whisk and beat these ingredients until smooth.
- Then I wash one chicken egg under running water to avoid salmonellosis, break it into a separate container, and then add it to the container, where butter and sugar are already located. Beat the egg with these components with a whisk.
- Pour 120 ml of milk into the container, mix the products.
- Sift through a sieve 220 grams of wheat flour with one pinch of baking powder. The sifted ingredients are added to the bowl to the remaining components gradually, in small portions, gently mix them with a whisk after each added portion. We should get the dough, in consistency resembling thick sour cream.
- We clean blackcurrant in an amount of about 100 grams from the stalk, wash it under the tap, pour it onto a paper or linen kitchen towel, give time to let the moisture go. Prepared berries are added to the dough. Mix the berries very carefully with the rest of the ingredients with a culinary brush. We do this carefully so that the currant berries remain intact.
- After that, put on a baking sheet 6-8 cupcake tins. We expect all the dough to be used based on the volume of forms. With a tablespoon or dessert spoon, lay out the prepared mixture in each tin so that it is half full.
- When all the dough is spread, put the baking tray with the forms in the oven for baking. Bake muffins at 200 degrees for 15 minutes.
- After this time, we take out a baking sheet with products from the oven, give them time to cool.
- After the muffins have cooled slightly, sprinkle them with powdered sugar on top. We need about one tablespoon of powder.
Useful Tips
- Instead of black currants for muffins, you can use red currants, cherries, raisins, any other berries.
- During the kneading of the dough, it is better to warm the milk slightly so that it is warm.
