Ingredients
- Chicken - 800 g

- Thyme - 2 branches

Step cooking
- Cooking the broth. We spread the chicken in the pan, fill it with clean water and put on fire.
- Cut one carrot in half and two more. Cut the onion in half.
- We spread the onions and carrots in a pan and, on the one hand, lightly fry them without oil.
- When the water with the chicken boils and boils for a couple of minutes, remove the foam and add the onions and carrots.
- Add the parsley stalk, bay leaf and peppercorns mixture. We cook the broth for an hour and a half over low heat under a lid.
- Salt and mix.
- We start to chop a kilogram of onion not very small and not very large.
- In another smaller pan, add vegetable and butter.
- Send the onions to the pan, add 1.5 tablespoons of sugar.
- Mix and fry for 40 minutes, stirring occasionally.
- Take 150 milliliters of broth and add it to the onion and evaporate.
- Next, add thyme, pepper and salt. Mix.
- Pour the wine into the onion. It is better to take dry white. Mix and evaporate it.
- Pour another 600 milliliters of broth into the soup. Cook for 5-6 minutes.
- Cut the baguette. Fry slices of baguette in a pan without oil, on both sides.
- Take the garlic and rub the baguette with garlic on both sides.
- Pour the soup into plates.
- Put a baguette on top, add grated cheese.
- Put the plates in the oven for a couple of minutes. When the cheese melts, everything will be ready.
Cooking variations
According to legend, such a French onion soup was prepared by Louis XV, when he really wanted to eat at night, but in his house there were no products except butter, onions and champagne. The king mixed the ingredients to make the same onion soup. This soup is now cooked in broth, and not necessarily meat. You can make a vegetable broth, and from this the soup will not become less tasty.
The main ingredient of the soup is onion, which is prepared very carefully and for a long time. Onions are steamed for a long time so that the taste of the soup is bright and rich. Often, dry white wine or sherry is added to onion soup. Cheese is used to serve soup to the table. This is usually cheese that melts well. If you really like cheese, you can add several different types of cheese to the soup. Before serving, soup can be sprinkled with finely chopped herbs, such as green onions, dill or parsley.
