Step cooking
- First you need to cook the dough in an uncooked way. To do this, lightly warm 250 ml of milk and pour it into a bowl. Then add 15 g of pressed yeast and mix. You can use dry yeast, then they will need 5 g. In a bowl add 1.5 tbsp. l sugar and sift about 300 g flour. Do not add all the flour at once, look at the consistency of the dough.
- Add half a teaspoon of salt to all the ingredients. It is important not to overdo it with salt, because hard cheese will be present in the filling. In this case, consider how salty the cheese is. Stir the flour well in a circular motion with a spatula. When the dough has become soft, add the rest of the flour, mix with a spatula, and when the dough has already gathered in a lump, knead it with your hands.
- Add to the test 1 tbsp. l vegetable oil and continue to knead with your hands until a uniform soft lump. Then on the work surface, sift about a tablespoon of flour, put the dough and knead so that it does not stick to the hands. The dough will turn out soft and smooth. Lubricate the bowl with vegetable oil, transfer the dough into it, roll, then tighten with cling film and set aside for about 40 minutes.
- In the meantime, prepare the filling for the tortillas. Peel 2 onions and cut into thin cubes or a quarter of a ring. Put the onions in a plate and add a little salt, remember with your hands a little, so that the onions let juice. Then grate approximately 125 g of hard cheese on a coarse grater.
- After 30-40 minutes, the dough came up. With vegetable oil, lightly grease the work surface and lay out the dough. Now it needs to be rolled out using a rolling pin into a layer 0.5 cm thick, giving the dough a rectangular shape.
- Lubricate the rolled dough with softened butter, about 50-60 g, without lubricating the top of the dough that is farthest from you, about 1.5 cm. This is necessary so that the roll is then wrapped well. Spread onion and grated cheese evenly over the entire lubricated portion of the formation. Then, gently and slowly, slightly pulling, twist the dough into a roll so that less air remains. At the end, tighten the non-greased portion of the dough well.
- Make marks on the test to divide the roll into equal parts of about 5 cm. You will get 8-10 pieces. Cut the roll into marks. Lubricate the dish with softened butter and put slices of roll on it at a distance, while slightly pressing on them. Cover the rolls with cling film and refrigerate for 30 minutes.
- Cover the baking sheet with parchment paper. Then the tortillas need to be crushed a little, made thinner. To do this, you can crush them with your hands to a thickness of 1-1.5 cm. Press the cakes from the edge to the middle to get a rim. Then shift them onto a baking sheet. Cover the baking sheet with foil and leave the cakes to come up for about 20 minutes.
- In the meantime, prepare grease for the beautiful tinting of the cakes.To do this, separate 2 yolks from the proteins in a cup or bowl. Add 3-4 teaspoons to the yolks gradually. water, mixing well with a brush. In order to get a good lubrication, and the cakes are not burnt, you need a mixture of yolks to be sufficiently liquid, so consider how much water your yolks will require. When the cakes have increased in volume, you can lubricate them with a prepared mixture of yolks. Do this carefully with a brush or teaspoon so as not to crush the cakes. Leave the cakes for 7-10 minutes to dry the grease, it should not stick to your fingers.
- Preheat the oven to 220 ºС and send the cakes to bake for about 17-20 minutes. Baking turns rosy and very beautiful. If you decide not to lubricate the cakes with eggs, then they can be lubricated immediately after baking with softened butter.
If desired, you can add finely chopped greens - dill or parsley to the tortilla filling. Onion cakes can be served both warm and cold, with tea or compote. You can use them instead of bread.
