Step cooking
- Cooking lobio should begin in the evening, as it is necessary to soak red beans. 500 g of beans should be poured with cold water and left overnight to make it swell. If you do not have time to soak the beans, lobio can be prepared on the basis of canned red beans.
- Then drain the water, pour the beans into a saucepan and pour cold water so that the beans are completely covered. Close the pan with a lid and bring to a boil over medium heat.
- When the beans are boiling, reduce the heat to a minimum and cook for 1.5 - 2 hours until fully cooked. Periodically it is necessary to remove foam. And so that the foam does not form at all, add a tablespoon of vegetable or olive oil. Cooking time depends on many factors, such as the variety and shelf life of the beans, water hardness, so check the readiness of your beans, you may need more or less time to prepare it. During the cooking of beans, monitor the amount of water, add it as necessary. Ready beans should be soft with a slightly cracked peel, but in no case should not be mashed.
- 10 minutes before the beans are ready, prepare the rest of the ingredients. Grind 4 - 5 branches of cilantro. You can add any other herbs to your liking.
- We cut one onion into a medium-sized cube.
- Finely chop 3 cloves of garlic.
- In the pot, add the prepared ingredients to the beans: onions and garlic.
- Next, pour 1 tsp. hops-suneli, a pinch of red pepper, salt to taste. If desired, you can add any other spices and seasonings.
- Add chopped cilantro.
- Grind 100 g of walnuts in a blender and add to the rest of the ingredients, mix well, cover the pan with a lid and simmer for another 20 minutes, stirring occasionally. Lobio is done.
- Arrange on plates, sprinkle with fresh cilantro and serve. You can sprinkle with walnuts to give a more expressive nutty flavor to the dish.
