Step cooking
Bean preparation
- In a bowl, pour 500 g of red or colored beans with cold water. If some beans come to the surface, press them down with your fingers, they may be empty inside. Such beans are not suitable and must be discarded. We leave the beans to swell for 6 - 8 hours (possible at night).
- After this time, we drain the water. We transfer the beans to the pan, pour water so that it covers the whole bean.
- We put on the fire. Let it boil, after boiling, drain the water.
- We put it on the fire again and fill it with clean water in a ratio of 1: 4 (1 part of beans in 4 parts of water). Part of the beans can be slightly mashed with a fork right in the pan. Just do not overdo it, in the finished dish should be a lot of whole beans. Cook over medium or low heat for 50 - 90 minutes, stir occasionally. Beans should become soft.
Vegetable preparation
- Dice 3 medium onions (or 2 large ones) into cubes. The onion in the dish should be felt, and it should be visible.
- Grind with a knife 3 cloves of garlic (can be passed through a press).
- We cut the top and bottom near the stalk cross to the cross 2 red ripe tomatoes. Put in a deep bowl, pour boiling water so that the water covers the tomatoes. Turn the tomato from one side to the other. Leave for 1 minute.
- We shift to cold water. With the tip of a knife, we pry off the skin and peel the tomato.
- Dice the tomatoes.
- We sort the kernels from the shell and membranes. Nuts should not be sweet and spoiled. Grind in a blender (meat grinder) 100 g of walnuts.
- Finely chop 12 g (a small bunch) of cilantro.
Cooking lobio
- Pour 2 tbsp into the pan. l vegetable oil, warm up. The pan is better to take a large diameter with high sides. Spread the chopped onion evenly. Fry over low heat until translucent with a light gold in color.
- We spread tomato cubes there.
- Add salt, red and black ground peppers to taste. Season 1 tbsp. l dry mixture of hops-suneli. We mix everything so that the aromas mix.
- We spread the boiled beans, chopped garlic, nuts and cilantro.
- To prevent the dish from getting dry, add water in which the beans were cooked. If you want the dish to be spicy, add 0.5 part red hot chili pepper. Fry for another 5 minutes until cooked.
The dish should be spicy and spicy, but at the same time, edible in spiciness. If you serve lobio hot - then this is the main dish, and if cold, then this is a snack.
