Step cooking
- Red beans (250 g) are pre-soaked for 6-8 hours. Boil the beans for an hour (do not close the pan with a lid, otherwise the beans will turn black). The ratio of beans and water during cooking is 1: 4. We throw the finished beans into a colander, letting the liquid drain.
- Finely chop 1.5 onions. Mix in a heated deep pan 20 g of butter and 30 ml of sunflower oil. Put the onion in the pan.
- Dice one carrot and spread it to the onion.
- Cut the tomato into small slices and send it to the pan, do not forget to stir the frying.
- As soon as the onion becomes transparent, add 2 tbsp. l Tomato paste, mix thoroughly. Add hot water - 150-200 ml. Stirring, give a little stew.
- Spread the boiled beans in the roasting, mix.
- Pour 1 tsp. salt. Add some sugar. We also add dried herbs to taste. Pepper if desired, mix. Cut into thin cloves 3-5 cloves of garlic and also sent to the total mass. Grind 0.5 bunches of dill, parsley, cilantro. Pour greens into a pan, mix.
- Close the pan with a lid and simmer lobio for 15 minutes.
Useful Tips
- For the piquancy of taste in such a dish, you can add a little chopped walnuts at the end of cooking.
- In lobio, you can safely add hot pepper, red ground pepper, suneli hop, bay leaf, suneli ear, adjika.
- As the main dish, lobio is served hot, as a snack - in the cold.
