Step cooking
- First you need to prepare the dry ingredients. To do this, sift 230 g of wheat flour into a deep bowl. Add to it 1.5-2 tsp. baking powder and ½ tsp. fine salt, mix dry ingredients thoroughly.
- Wash the lemon and grate the zest of one whole citrus on a fine grater, then cut the lemon pulp in half, and squeeze the juice out of it with a juicer or fork.
- In a separate bowl, add 3 chicken eggs, 200-250 g of sugar and 250 g of sour cream 15-20%, beat all the ingredients with a mixer until smooth, do not need to be beaten strongly.
- Next, add 125 ml of vegetable oil, zest of one lemon and 1 tbsp. To eggs and sour cream. l lemon juice, mix all the ingredients again with a mixer.
- Pour the sifted flour to the eggs, sour cream and lemon juice, mix everything with a mixer.
- Put baking paper into the bread pan or whatever you like. It needs to be lightly greased with butter, so the lemon muffin will not stick during baking, and afterwards it will easily get out of shape.
- The oven should be preheated to 180 degrees. You need to bake a lemon muffin for one hour in a bread pan, however, if you prefer a different bread pan, then the time should be adjusted. On average, cooking time can vary from 30 minutes to 1 hour. Check the readiness of the cake with a toothpick: if you puncture the dough in the middle, you get the toothpick dry, then the dish is ready.
- Now you need to cook the icing. To do this, pour 250 g of powdered sugar into a deep plate and add 2-3 tbsp to it. l lemon juice. It is better to pass the juice through a sieve or cheesecloth so that bones and fibers do not get into the glaze. Mix the ingredients thoroughly, the mixture should resemble not too thick sour cream.
- In order to decorate a lemon muffin, let it cool slightly, and then pour over the icing. You should not glaze the hot cupcake, otherwise it will just dissolve and the pastries will not have a beautiful white hat.
