Step cooking
- Cut into small cubes the oil at room temperature (100 g), transfer to a deep bowl.

- Add granulated sugar (100 g) to the oil.

- Continuing the whipping, put the lemon zest (from one lemon) and salt (2 g) into the mass.
- Beat until smooth, the sugar should disperse.
- Add lemon juice (40 ml) to the bowl, mix with a mixer.
- Pour sifted wheat flour (340 g) into a bowl, baking powder for dough (8 g).
- Knead the dough with a pastry spatula and hands.
- Cover the bowl with the finished dough with cling film (so that the surface of the dough does not dry) and put in the refrigerator for 1 hour.
- Preheat the oven to 180 ° C, while the cabinet is warming up, form cookies. Cover the baking sheet with baking paper. Remove the dough from the refrigerator. Take a tablespoon of dough, roll balls the size of a large walnut. Thickly roll the dough balls in icing sugar (100 g).
- Spread on a baking sheet covered with baking paper about 3-4 cm apart.
- Bake cookies in a preheated oven (180 ° C) for 15-18 minutes.
- Remove the finished cookies from the oven, let cool.
- Ready-made lemon cookies have a beautiful crust in the cracks and delicate aromatic flesh. Serve pastries with milk, cocoa, tea or coffee, eat just like that.
