Step cooking
- To prepare the dough, pour 200 g of kefir into a deep bowl. Then pour 1 teaspoon in a bowl with kefir. baking soda and mix well with a spatula. For cakes, it is best to use fatty kefir, from 2.5%. Instead of kefir, you can also use natural yogurt or yogurt.
- After you have extinguished the soda in kefir, add 1 tsp to a bowl. sugar and 1 tsp. salt. Mix everything well with a spatula. Then pour 25 g of vegetable oil to all the ingredients and mix well. Sieve about 320 g of wheat flour into a bowl with a sieve. In a separate bowl, beat one chicken egg lightly, then add it to the flour.
- Knead the dough in a circular motion - first with a spatula, and when it thickens - with your hands. If necessary, sift more flour into a bowl so that the dough is denser and does not stick much to your hands, but do not clog the dough with flour. Cover the bowl with the dough with cling film and leave it for about 15-20 minutes.
- In the meantime, prepare the filling for the tortillas. In a separate bowl, rub 300 g of mozzarella on a coarse grater. You can use any other cheese to your liking, Suluguni cheese is good. To the grated cheese, add 1 chicken egg, salt to taste and 1 tsp. dried garlic. Adjust the amount of salt depending on how salty the cheese is in the filling. Then mix everything thoroughly with a spoon.
- From several branches of thyme, gently tear off the leaves and add them to the filling, mix everything well. If desired, you can use any spices to your liking, as well as add chopped herbs to the filling - dill, spring onion, basil, etc.
- Sprinkle a small amount of flour onto the work surface and place the dough on it. Using a knife, divide the dough in half. Cover one part of the dough with cling film while working with the other. Once again, sprinkle the work surface with flour and roll the dough on it into a small cake.
- In the middle of the rolled cakes, lay out half the cheese filling. Collect all the edges of the dough in a bag and pinch well. Turn the tortilla upside down and roll it with a rolling pin about the diameter of the pan so that the cheese is well distributed inside the tortilla. Repeat the same with the second half of the test.
- Heat the dry pan on the stove well. Gently move the tortilla on a preheated pan with the seam down. Fry the cakes on each side for about 3-4 minutes until they are rosy in medium heat.
- When ready, transfer the tortilla to a dish and brush with a piece of butter. In the same way, cook a second cake and serve.
